Highlanders Rainbow Rice is made up of 7 different ingredients. They are namely Brown Rice, Black Glutinous Rice, Buckwheat, Mung Beans, Chinese Barley, Shitake Mushrooms and Seaweed. Below are some interesting facts of the different ingredients of Highlanders Rainbow Rice.
Brown Rice
It is rice is are partially milled to remove the husk, leaving the bran layer that is brown in colour. The embryo remains intact and thus is considered to be a type of whole grain. As such, it contains more vitamins and minerals compared to normal white rice.



Black Glutinous Rice
Also known as forbidden rice, this rice was said to have been discovered and cultivate by Emperor Kangxi during the Qing dynasty for its highly nutritive qualities. This grain was also highly featured in the famous Chinese classic novel “Dream of the Red Chamber” (红楼梦) as a blood tonifier due to its high iron content.
Buckwheat
Commonly used by the Japanese as an ingredient for gluten-free noodles, buckwheat is a fruit that is rich in essential amino acids and minerals such as iron and selenium. It also contains the flavonoid rutin, which is effective in reducing the cholesterol and keeping the capillaries and arteries strong and flexible.
Mung Beans
Mung beans are considered superfood as they are rich in
nutrients and easy on the digestive system. They are a good source of proteins, dietary fibre and contain vitamins A, C and E, folic acid, phosphorus, magnesium, iron and calcium.
Chinese Barley
Also known as Job’s tears, the use and cultivation of Chinese barley dates back to Zhou Dynasty, where the grain was classified in the highest class of food herbs and considered as one of the five major food grains by the Chinese. The grains contain a large amount of vitamin B complexes, potassium, calcium and iron.
Shiitake Mushroom
A type of fungus, the shitake mushroom is delicious and often used in Chinese and Japanese cuisines due to its unique flavour. These mushrooms provide high levels of protein, potassium, calcium, magnesium, phosphorus and vitamin B complexes, vitamin D. They contain lentinan, a beta-glucan known to boost immune system.
Seaweed
A type of algae, seaweed is a rich source of iodine, an element essential for proper thyroid function, the deficiency of which leads to goitre. Seaweed draws an extraordinary wealth of mineral elements which include macronutrients such as sodium, calcium, magnesium, potassium, chlorine, sulfur and phosphorus; and micronutrients such as iodine, iron, zinc, copper, selenium, fluoride, manganese, boron, nickel and cobalt.
